Turkey Meatballs



So, how did I know you're desperately in need of turkey meatballs? I just did. I'm here for you. 



Ingredients:
1 lb ground turkey
1 tsp tabasco sauce
2 cloves garlic
1 tbslp blue cheese
1 tblsp mayonnaise
1/2 tsp sage
1/2 tsp basil
1/2 tsp rosemary
1/2 tsp salt
1/2 tsp black pepper

1/2 box linguine
2 tblsp olive oil
1 small green pepper
3 sun dried tomatoes
3 kalamata olives
2 spring onions
2 garlic cloves
1/2 cup white wine
1/4 chicken broth

Put a large pot of water on the stove to boil
90% lean ground turkey

Green tabasco sauce - yum
Use a garlic press so the garlic pieces are tinier than tiny
Always keep good spices on hand!
So typically you would use egg for these meatballs - it's needed as a binder, but I didn't have any. So I thought I'd use mayo. Hey, it's got egg in it! It actually turned out lovely!

I always use light mayo - really can't taste the the difference
Any good quality blue cheese will do

Mix it all together
Make evenly sized balls


Cover and cook on low


The water should be at a boil by now, so add the pasta in and cook for about 10 minutes (or whatever the package says). You don't want the pasta to be too limp so make sure you check on it.

Chop the garlic, spring onion, sun dried tomatoes, olives, and green peppers


Add olive oil to a saute pan and saute veggies


Veggies will cook through
Add wine and broth

The meatballs will be cooked at this point (but you can always be sure by using a thermometer)

The pasta should be done as well. Combine the sauce, meatballs, and pasta

Mix well and let cook on low for a couple more minutes so all the flavors meld

Serve in a large bowl

Plate and then...
enjoy!!
