Merry Christmas!! I hope you had a fantastic day yesterday, full of gifts, friends, and family.
In this post Christmas haze, I thought it was the perfect time to enjoy a bit of eggnog. And this recipe is sure to make you never buy store bought nog again!
Ingredients
1 & 1/3 cups soy milk1/4 tsp nutmeg
1/4 tsp vanilla extract
1/4 tsp ground cinnamon
4 egg yolks
1/3 cup sugar
1/2 cup bourbon
1 & 1/3 cups cream
3/4 tsp vanilla extract
Step 1: In a sauce pan combine the milk, vanilla, nutmeg and cinnamon, and over low heat, slowly bring to a boil.
| You don't have to use soy, you can use whichever type of milk you use at home. |
Step 2: In a separate bowl, combine egg yolks and sugar.
| Save the egg whites to make an omelet. |
Step 3: Mix until fully combined, and mixture is fluffy.
Step 4: When milk mixture has boiled, take off heat. Add about a tablespoon of milk at a time to the egg mixture. Do this for about 1/2 cups worth, until the egg is at the same temperature as the milk.
| As tedious as this is, it's really important, or instead of eggnog, you'll end up with scrambled eggs! |
Step 6: Add the mixture back into the saucepan, and bring to an almost boil.
Step 7: Remove saucepan from heat, and add cream
| You can use light or heavy cream. Totally your call. Light keeps it a little less of a calorie nightmare, but heavy makes a bit more divine. |
Add bourbon
| The bourbon is optional, and you can keep this as non-alcoholic if you prefer. I've heard you can also substitute in rum if you like that better. |
and vanilla extract. Give it a good mix.
Step 8: Let sit for a few minutes. Transfer to a jug or bottle
Step 9: Put in fridge to cool. Give it at least 5-6 hours so the eggnog has completely cooled. Even better if you can leave it in overnight.
Step 10: Pour into a eggnog worthy glass, and enjoy!
