MMMM cookie!
Hello friends. Happy April! I hope you had a lovely March. It was a pretty crazy month, and I didn't get a chance to share a post with you, so I will try for two this month. Maybe.
Today, we have COOKIES!!! Oatmeal to be specific. And you won't believe how simple and quick it is to make. Here we go!
Ingredients:
1/2 cup unsalted butter (1 stick)
1/2 cup packed light brown sugar
1/4 cup white sugar
1 egg
1 egg
1 tsp vanilla extract
1/2 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
1-1/2 cups quick-cooking oats
1-1/2 cups quick-cooking oats
Optional:
1/2 cup raisins
1/2 cup chocolate chips
Step 2: Place a stick of butter in a large bowl
Make sure you leave the butter at room temperature until it is soft and easy to mix |
Step 4: Add white sugar
Step 5: Mix well, until butter has been broken up
Step 6: Add vanilla
Step 7: Add egg and continue mixing

Step 9: Add salt
Step 10: Add baking soda
Step 11: Add oats
You'll want to use quick cooking oats, otherwise they will not cook thoroughly enough and the cookie will be crap. |
Step 13: Add the dry items to the wet items.
Note: I decided to make two different "flavors" raisin, and oatmeal. So I split the batter into two batches. If you decide to go with plain, or just one addition, you can choose to skip those steps. But I wouldn't suggest it!!
Step 14: (optional) Add raisins, or chocolate, or walnuts, or cranberries, etc.

Step 15: Line baking sheets
Step 16: Use a cookie scoop, or spoon, place each scoop about 2 inches apart on the baking sheet
Step 17: Bake for 12 minutes in the preheated oven
The time depends on your oven. I'd say keep an eye on it, and when it is still somewhat soft take it out of the oven |
Step 19: Enjoy the heck out of them!
