Seafood Chowder


Happy February, friends.  I hope everyone has a a wonderful Valentine's day! I've been considering a seafood dish for quite some time. Originally I had planned to do a seafood linguine dish, but it's been so cold out I really wanted something warm and hearty. What better than a delicious bowl of chowder! I suppose it could have been any soup, but I was jones-ing  for seafood. This turned out really great, and it was pretty darn simple. I know I say that a lot! But it's true, so give it a try! You won't regret it! Here we go.



Ingredients
2 slices bacon
1 tsp butter
1 large onion
2 stalks celery
2 tblsp flour
8 oz clam juice
1 large potatoes
1.5 teaspoons thyme
1 tblsp lemon pepper
1 tsp cayenne
1/2 dozen clams
1/2 lb halibut
1/2 lb shrimp, peeled and deveined
1/2 lb scallops
1 cup half and half

Step 1: Cut bacon into small pieces and add to a medium stockpot type pan

Cook until fat has rendered and bacon starts to get crispy
Step 2: Add the butter and onions to the pan

Cook until softened, about 10 minutes
Step 3: Add the flour and stir until well combined.


Step 4: Add sliced celery and potato

Step 5: Add thyme, lemon pepper, and cayenne

Step 6: Add clam juice




Step 7: Add seafood: Shrimp, halibut, scallop, clams
Chop halibut into large pieces so they don't disintegrate in broth

Cook for about 10 minutes until seafood has cooked through. 
Step 8: Add in half and half
In hindsight, I don't see why we couldn't use light cream or even evaporated milk
Do NOT let the cream boil, or it could curdle.

And there you have it folks.


Serve with a big hunk of bread, and you'll be warmed all the way down to the cockles of your heart. (see what I did there
