Hello my friends! How are you all doing? Thanks for stopping by today. I know it's been far too long since I've had a chance to speak with all of you. It's been insanely busy!!
I hope everyone is having a wonderful May so far. Although it's hard to believe it's actually May, since somehow it's still a bit chilly here in Philadelphia. But on the plus side, the air conditioning bill might be lower than usual this year.
A few weeks ago, I got a suggestion to make tomato soup. I didn't make that exactly, but since it hadn't quite warmed up yet, I did decide to do a soup. And since I didn't post in April, it's a double hitter recipe! And the best part is, the preparation for both versions is completely the same, it's just the cooking method that varies.
So I I think all of us have ordered wonton soup or crispy pan fried wontons at one point or another. For me, depending on where it's from it has been hit or miss. And I have to say, this one was a big hit! And of course, as always, this recipe is so simple, you'll never want to order it as take-out again! So here we go!
Ingredients:
2 pork chops
10 medium shrimp
1 tblsp mirin
1 tblsp light soy sauce
1/4 small onion
1 tsp fresh ginger root
1/4 tsp cayenne
1/4 tsp coriander
1/4 tsp brown sugar
24 wonton wrappers
3 cups chicken broth
4-5 medium mushrooms
Step 1: Ground the pork in a grinder.
I would suggest to cut off any fatty pieces. |
Also note: you can substitute any meant in here....chicken, beef, just shrimp. And I think if you wanted to do a vegetarian version you could substitute the meat with mushroom as the filling. |
Step 2: Add shrimp to grinder
Again, if you don't have a food grinder, just use the food processor or chop it up with a knife |

Step 3: Grate ginger, dice onions, and garlic. Add to bowl with shrimp and pork.
Step 5: Add soy sauce
and mirin
If you don't have mirin, you can add in regular white wine |
There's tons of choices in the markets now for wont wrappers. Choose any you like! |
Step 6: Dampen a paper towel with water and wipe all four sides of the wonton
Step 7: Take about a tsp of the mixture
I had to fiddle with it a bit before I got the amount right. |
Step 8: Fold the corner of one side of the wonton over diagonally to make a triangle
Seal each side by pressing together
I decided to line up the wontons, dampen each side, and then fill them, sort of factory line style to make the work faster |
Step 10: Slice mushrooms and add to broth
Step 11: Drop wontons into broth and boil for 4-5 minutes
You could add some green herbs to make this a "prettier" presentation |

Option 2: Fried wontons
Step 12: Heat oil in skillet
Step 13: Fry wontons for 3 minutes a side.
