Coq au vin


Happy New Year my friends!

I thought I'd start off this year with a special dish. I'm sure everyone has seen coq au vin on a dinner menu at some point or another. It's not an every day dish, but I thought I'd give you something to wow all your friends at some points.  So I thought I'd start with the pronunciation. Phonetically this is how it sounds: Coh- co-vahn (very light enunciation on the end n). Also here is a site that helps you hear how it sounds as well: Audible pronunciation for coq au vin

Now that we got that out of the way...! This is a really wonderful dish. It's a bit decadent so I think it's perfect for a special occasion or whenever you feel like treating yourself. Don't be intimidated to give this a go. There's a few steps involved, but they are easy steps. I promise you will not regret it!!
Note: This recipe makes about 3 hearty servings.

Ingredients
3 strips of bacon
3 large chicken thighs
salt and black pepper
2 large carrots
1 yellow onion
2 cloves garlic
3/4 bottle red wine
1 cup chicken stock/broth
1 tsp dried thyme
1 tblsp all-purpose flour
6-8 button mushrooms

Step 1: Cut the bacon into small pieces


Step 2: Cook the bacon until it is crispy.
I cooked this right in the dutch oven.

Step 3: When bacon has been cooked, remove from pot. Leave the bacon renderings in the pan for the chicken

Step 4: Season chicken with salt and pepper

Step 5: In the pot with the bacon renderings, place the chicken in the pan skin side down first for 4 minutes, then flip over and cook the other side.
Use the bacon renderings to cook the chicken. You don't need additional oil.
Cook until chicken is lightly browned
Step 6: Remove chicken from pot and put aside.


Step 7: In the same pot you cooked the chicken, add in the sliced carrots and onions

Step 8: Meanwhile, chop the garlic and slice mushroom and add to pan.



Step 9: When vegetables have softened. Add chicken back into pot.

Step 10: Add in wine and chicken stock

Step 11: Add in salt, pepper, and thyme

Step 12: Add in 1 tablespoon of flour and mix into the broth.
it might be easiest to mix this with hot water outside of the pot and thin it out first so it doesn't clump when you put it in. 

Step 13: Cover and cook for 4 hours on low.
The chicken will literally fall off the bone. MMM delicious!

Step 14: Get ready to have your socks knocked off.

Step 15: Serve in a bowl with some bread.
