Sweet and Sour Chicken

I'd like to order the #3 on white rice

Well hello! Tonight, we won't order take-out. We're gonna make it ourselves, and it's gonna be delicious and you're gonna love it!

 Ingredients
2 large pieces of chicken
2 tbsps oil
1/2 cup sliced green bell pepper
1 small onion
2 cloves garlic
2 tsps ginger
1 can bamboo shoots
1 can water chestnuts
1 8-10 oz can chunked pineapples
2 tsps salt
1/2 tsp pepper
1/2 tsp pepper flakes
drained pineapple liquid
1/2 cup white vinegar
1 1/2 cup water
1/2 cup vinegar
1/4 cup cornstarch
3 tbsps water

Start off by putting some rice on to cook.

I used chicken breast. Slice into thin strips.

Heat oil

Fry chicken

Let it cook until it turns white and starts to give off juice

In the meantime, slice green pepper, onion, garlic and ginger

Add to pan

Open bamboo shoots and water chestnuts then drain
These are not mandatory. Again, just use whatever is in your pantry or fridge. For example slice some carrots into thin strips.Or use sugar snap peas, or broccoli.
Add to pan

Open canned pineapple, drain liquid and set liquid aside. Add pineapple to pan

Add salt, pepper, and pepper flakes

Combine drained pineapple liquid, vinegar, and water.  In a separate bowl, combine cornstarch and a small amount of water. Mix with a spoon or fork until all the cornstarch has dissolved. When it has been mixed well, add to the rest of the liquid.

Make sure you do not skip the step of combining the cornstarch separately. Do NOT add the cornstarch straight into the rest of the liquid or you will have chunks of cornstarch floating around.

Let come to a boil.

Add hot liquid to chicken and veggie mixture and bring to a bubble.

Once is has heated through, put in a pretty bowl

The rice should  be ready to go
What white rice looks like in a bowl
And voila! You have a so much better than take-out version of sweet and sour chicken!

Enjoy!
