HAPPY CINCO DE MAYO!
In honor of this most esteemed of pub crawl holidays, I'm posting this absolutely delicious and unbelievably simple recipe. If you're not a seafood fan, you could easily switch out the shrimp with chicken.
Ingredients:
1/2 cups flour
1/2 tsp garlic powder
1/2 tsp salt
2 chipotle peppers in adobo sauce
1 tblsps olive oil
3/4 cups beer
tortillas
Accompaniments:
Onions
Radish
Asparagus
Cheese
Spinach
Sour Cream
Salsa
Hot sauce
Mix together the flour, garlic powder and salt
Add beer to flour and mix
Chop two chipotle peppers
Be careful - this is very spicy. Wash your hands thoroughly after touching! (especially if you wear contacts!) |
Add the pepper into the batter and stir well. Add shrimp and coat thoroughly.

Shrimp fry very quickly. It should only take 2-3 minutes per side.
The following ingredients are not required, but definitely up the taste factor.
Chop onion, radish and asparagus and saute for a few minutes.
I used larger tortillas, but you could use the smaller kind if you'd like. I think you could even use hard shell tacos if you preferred.
Warm the tortilla
Assemble the taco using the whichever accompaniments you prefer. I used the following:
Sour Cream, Monterey Jack Cheese, Spinach, Salsa, Guacamole |
Chopped tomato |
For any remotely mexican type dish - Cholula brand hot sauce is by far my favorite. |
