Chipotle Lime Shrimp Tacos

HAPPY CINCO DE MAYO!
In honor of this most esteemed of pub crawl holidays, I'm posting this absolutely delicious and unbelievably simple recipe. If you're not a seafood fan, you could easily switch out the shrimp with chicken. 


Ingredients:
1/2 cups flour 
1/2 tsp garlic powder
1/2 tsp salt
2 chipotle peppers in adobo sauce
1 tblsps olive oil
3/4 cups beer
tortillas
Accompaniments:
Onions
Radish
Asparagus
Cheese
Spinach
Sour Cream
Salsa
Hot sauce

Mix together the flour, garlic powder and salt

Add beer to flour and mix
This is a yummy one to use
Chop two chipotle peppers

Be careful - this is very spicy. Wash your hands thoroughly after touching! (especially if you wear contacts!)
Add the pepper into the batter and stir well. Add shrimp and coat thoroughly.
The batter will be thick not runny
Take each piece and fry in oil.

Shrimp fry very quickly. It should only take 2-3 minutes per side.

The following ingredients are not required, but definitely up the taste factor.

Chop onion, radish and asparagus and saute for a few minutes.

I used larger tortillas, but you could use the smaller kind if you'd like. I think you could even use hard shell tacos if you preferred. 

 Warm the tortilla

Assemble the taco using the whichever accompaniments you prefer. I used the following:
Gouda Cheese, Asparagus/Radish/Onion mixture
Sour Cream, Monterey Jack Cheese, Spinach, Salsa, Guacamole

Chopped tomato
For any remotely mexican type dish - Cholula brand hot sauce is by far my favorite.

This is what it will approximately look like
And per my usual, I made a small side salad to go along with it.
