Happy (belated) National Macaroon Day!
If you're thinking, what is this! I've never heard of such a day. It sounds delicious. Well that's exactly what it is. I don't know if it's a real holiday or not, but I figured I'd take advantage of this lovely day. The actual day is May 31st, so we're a bit late, but better late than never. And as always, this is so simple you won't believe it. There's a couple different ways to make this, and I may try a different way soon and post it. so here we go.
2/3 cup all purpose flour
5 1/2 cups flaked coconut (1 bag)
1/4 tsp salt
1 (14 ounce) can sweetened condensed milk
1 tsp vanilla extract
1 tsp almond extract
Optional: 3/4 - 1 cup chocolate chips
Step 1: Preheat oven to 350 degrees F
Step 2: Line cookie sheets with parchment paper.
If you don't have parchment you could use aluminum foil |
Step 3: In a large bowl, stir together the flour, coconut and salt.
Step 4: Add in condensed milk, vanilla extract and almond extract
If you don't have almond extract, just use 2 tsps of the vanilla extract |
Step 5: Mix well
Step 6: Using a cookie scoop or if you want larger macaroons, use an ice cream scoop and drop onto prepared cookie sheets
Step 7: Place cookie sheet in preheated oven for 15 minutes
Optional
Step 8: Meanwhile set up a double boiler to melt the chocolate chips Fill a pot with about a cup of water and place a medium bowl on top of pot.

Step 10: Stir until chocolate is melted
Step 11: By then the macaroons will be ready
Step 12: If you made the chocolate, drizzle on top of macaroons. I decided I needed more than a drizzle
The cookies will be hot, so let cool |
