Tapas!

Hello my friends! I feel like I begin each of these blogs with an apology for taking so long to post! I do want to start posting more often. I'm hoping for once a month! Stay tuned! 

Last month, my sister and her husband came to visit for his birthday dinner. So I decided to take my recent experience in Spain and do a tapas type dinner.


Note: The photography got a bit difficult with so many items going, so apologies for any steps missing. 

Tapa 1: Crab and Gouda Stuffed Mushroom

Ingredients
12 large stuffing mushrooms
1 cup chopped spinach
2 cloves chopped garlic
1/4 cup shredded cheese
6 oz lump crabmeat
1 tsp salt
1 tsp pepper

Step 1: Mix all ingredients together 

I used Gouda cheese. But you can use anything, even cream cheese.
Step 2: Stuff the mushrooms with enough stuffing to fill them up


Step 3: Place mushrooms on a baking sheet lined with foil.

Step 4: Bake in oven preheated to 350 degrees for 20 minutes.  

Tapa 2: Salmon wrapped Asparagus

Ingredients
Asparagus
1 filet of raw salmon
salt
pepper

Step 1: Slice the salmon filet into thin strips

Step 2: Wrap each asparagus with a slice of salmon

Step 3: Place on a foil lined baking sheet


Step 4
:  Bake in 350 degree oven for 10 minutes. 


Tapa 3: Prosciutto, goat cheese, and fig roll.

Ingredients
1 package crescent roll
 6 slices prosciutto
1/4 cup goat cheese
6 tsp fig compote/jam/preserves

Step 1: Layer the crescent roll with a slice of prosciutto with a few small pieces of goat cheese.

Step 2: Add the fig compote
Step 3: Roll the crescent roll with longer edge rolling into the shorter edge
Step 4: Place on a foil lined baking sheet and cook in a 350 degree oven for 12 minutes. 

Tapa 4: Coconut Shrimp

Ingredients 
1/2 cup all-purpose flour
2/3 cup beer
1 cups flaked coconut
16 shrimp
oil for frying

Step 1: Combine all purpose flour and beer
Step 2: Dip shrimp into the batter

Step 3: Roll the shrimp into the coconut
 
Step 4:  Heat oil and drop shrimp in
 
Step 5: Flip each shrimp after 2 minutes. It will be golden brown. 

 


Tapa 5: Prosciutto wrapped Scallops

Ingredients
10-15 scallops (bay or sea are fine. Just try not to get the tiny tiny ones)
5 slices prosciutto cut in half
10-15 toothpicks

Step 1: Wrap each scallop with a half slice of prosciutto

Step 2: Skewer each piece with a toothpick


Step 3: Place scallops on a foil lined baking sheet and bake at 350 degrees for 15 minutes. Flip each scallop halfway through.


Tapa 6: Blue Cheese crusted strip steak bites

Ingredients
1 filet strip steak (or filet, ribeye or favorite cut of meat)
Blue cheese

Step 1: Cut the filet into bite sized pieces.

Step 2: Heat a pan and add meat.

Step 3: Flip meat after 1 minute (longer if you want more cooked meat)

Step 4: Top with a drop of blue cheese


Step 5: Remove from heat
Coconut Shrimp, Steak Bites, Asparagus, Scallops,

Stuffed Mushrooms

Crescent Rolls

Yum!

  1. Let's say just your sister and her husband were happily gluttonous! The food was so delicious and we still keep talking about it...anytime you want to spoil us, just let us know- we won't hesitate to oblige ;)
