Irish Potatoes

Now, before you all go off and drink "special"  green beer (why???)  remember to think of good old St. Paddy, who bravely escaped his Irish captors and then returned one day to christianize the whole lot of them......And now somehow, he's the patron saint of the bar crawl and green beads!



Did you know that Irish Potatoes are a Philadelphia born treat? My pride overflows about that along with cheesesteaks (wit), soft pretzels, hoagies, and tasykakes.

So here is a special edition entry just for us Irish.   Um, sorry got carried away. I meant to say, it's for all of us, even the non-Irish!

For those who think I'm about to make potatoes, you are in for a treat! These are actually made from cream cheese, cinnamon and coconut and a ton of sugar! It's not for the faint of heart and it's definitely not for a diabetic. It's also good that it's basically a once a year treat, cause honestly, I'm pretty sure the caloric content will punch you in the face.

Let's get 'er done.

Ingredients
1/4 cup butter
8 ounces cream cheese
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 1/2 cups flaked coconut
1 tablespoon cinnamon

Make sure the butter and cream cheese are at room temperature

and then mix with cream cheese until it's velvety smooth.
Add vanilla and confectioners' sugar

Tip: You may have noticed I used a hand mixer. If you end up doing this, I would suggest you give it a stir with a spatula first, or the confectioners' sugar will make you look like a powdered donut
 Mix well until everything is combined and looks like icing

Add in the coconut

Mix the coconut until its all one big mess.
Roll into tiny balls.
They don't need to be round. They can be imperfect like potatoes.
Place in fridge for about 30 minutes to an hour. They need to be very firm.

Put the cinnamon on a plate or put it in a storage bag
Tip - You can add a bit of confectioners' sugar in with the cinnamon because the cinnamon has a lot of bite to it (as anyone who has heard of the cinnamon challenge may know)
Roll the candies around until they are completely coated
 
Place in fridge for another 30 minutes to an hour. They truly taste the best when they're not mushy.Trust me!
