Creamy Pesto Chicken

Happy Easter! This time of year is wondrous to me for two reasons. One - everything gets so beautiful. The flowers are simply gorgeous, the trees bloom into these majestic and magnificently colored beings,  and its warmer than the dismal winter. Never mind that I have the worst allergies in the world. It's still worth it.

And two - Cadbury creme eggs. OMG I am an absolute addicted fiend about these wondrous delights. My addiction dates back to my middle school days. Someone told me about them and on the next grocery trip I picked them up and it was love at first bite. I would gladly accept these amazing creations as bribes as an fyi. Just putting it out there.
Ok sorry, I got carried away. Those things have absolutely nothing to do with today's recipe. So let's move on.



I have to admit - this meal started off as something completely different in my mind, but as I started incorporating the ingredients, it just seemed right to take it in this direction.

Ingredients
1 lb chicken breasts (2 large pieces)
2 tbsps green pepper
2 mushrooms
1 small onion
1-2 cloves garlic
2-3 pieces sun dried tomatoes
1 1/2 tbsps pesto sauce
1 cup light cream
1 tsp salt
2 tsps black pepper
1 cup pasta

Place water on heat, and when boiling add pasta - I used campanelle. It's a pretty flower shaped pasta so it works well with sauces. 


Slice the chicken into strips and fry in pan until no longer pink

Slice mushrooms, chop green pepper and onion 

Chop garlic and sun dried tomatoes

Add to pan

If you have enough basil, pine nuts, olive and garlic on hand, you can make your own pesto.
I didn't have enough basil so I used this.It was actually quite delicious.
Add pesto and cream to the chicken in pan and cook through. 

The pasta should be drained and ready at this point. Add to chicken mixture.
And you may not believe this, but my name is not Ripley, so believe it - that's it! Dinner is ready!

I served this with some garlic, sesame green beans and a crescent roll.

  1. What's another word I can use instead of yum? MMM =) Loving all your recipes- this looks so delicious and easy to make- but for my lazy days, too bad I can't order take out from you =D
