(Turkey) Meatloaf

No, not that Meatloaf!!

So I must admit, I'm not a very huge fan of meatloaf, as I find it to be a bit bland, and boring. But I think this recipe sort of rocks, so give it a go! I hope you enjoy it!

Note: You'll notice that Turkey is in parentheses. That's because you can use any kind of ground meat you'd like. Typically, folks use ground beef for meatloaf, so that would be a completely acceptable substitution

Ingredients:
1.5 lbs ground turkey
1 tblsp dried sage
1 tsp dried thyme
1/2 tsp ground black pepper
1 small onion
1-2 scallions
1-2 hot peppers
3 cloves garlic
1/4 cup chopped red or green bell pepper
1.5 tsp salt
1/2 cup bread crumbs
1 egg
Garden herbs (optional)

Glaze:
1/2 cup ketchup
1 tsp ground cumin
Worcestershire sauce
1 tblsp honey

Note: Preheat oven to 325 degrees before you get started

Step 1:  Place meat in a large bowl and add sage, thyme, cayenne, salt, and pepper to it
Don't mix until you've added all the solid ingredients in, so you don't overwork the loaf

Step 2: Grind up some bread in a food processor to make 1/2 cup bread crumbs and add to meat

Of course you can just use regular bread crumbs if you would like
Step 3: Dice scallions and onions and add to meat

Step 4: Crush garlic in garlic press and add to meat
You can also just mince the garlic if you don't have a press. Crushing it, allows for it to be finer and to be spread throughout meat.
Step 5: Dice bell and hot peppers and add to meat

If you prefer, you can use ground cayenne pepper instead.
Step 6: Chop the herbs if you decide to use them and add to meat
I happen to be growing cilantro, parsley, basil, and rosemary, so I added a small bunch in.
Step 7: Mix all ingredients together

Step 8: Beat the eff separately, and add to meat mix

Step 9: Spray or oil loaf pan

Step 10: Press meat into pan

Step 11: Place meat into oven for 10 minutes

While loaf starts cooking, make glaze
Step 12: Combine ketchup, cumin, Worcestershire, and honey into a bowl and whisk well

Step 13: Take loaf out of oven and using a pastry or bbq brush, brush the glaze over the top of the loaf

Step 14: Put loaf back into oven and continue cooking for about 35-45 minutes until temperature reaches 165 degrees.

Enjoy!!
